We are from Tennessee, and I think we make pretty good barbecue. This particular pork butt needed more than “cook it until it is done.” Jason was taking it to school to feed the kids, so it had to come off the smoker with enough time to rest before he left.
I supplied the exact 7.21-pound weight, the weather, the wind, and the required schedule. ChatGPT worked backward to a start time for the overnight cook. I could have found a meat chart and done a rough calculation myself, but a chart would not have known which piece of meat I had, the conditions outside, or when Jason needed to leave. I put it on at the recommended time. It came off when it needed to. For an overnight cook that I could not spend all night adjusting, that was useful precision.
